Carrot Cake

Nutty carrot cake topped with cream cheese icing
Ingredients
  • 500g grated Carrot
  • ½ cup grated Pineapple
  • 2 cup Sugar
  • 1 1/3 cup Oil
  • 3 Eggs
  • 1 tsp. Vanilla Essence
  • 2 ½ cups Flour (sifted)
  • 2 tsp. Cinnamon Powder
  • 2 tsp. Bicarbonate of Soda
  • ½ tsp. Salt
  • 1 cup Raisins
  • 1 cup Pecans
Method
  1. Beat the Sugar, Oil, Eggs & Vanilla.
  2. Add the Flour, Cinnamon, Bicarbonate & Salt.
  3. Mix the Raisins & Pecans with 1 tbslp. of Flour.
  4. Add the Carrots, Pineapple, Raisins & Pecans. Make sure you mix this well.
  5. Place into a greased cake ring and bake for 30-40 mins on 180 degrees.
Cream Cheese Icing
Ingredients
  • 200g Butter
  • 250g Cream Cheese
  • 1 tsp. Vanilla
  • 400g Icing Sugar
Method
  1. Beat the Butter & Cream Cheese till smooth.
  2. Add in the Vanilla & Icing Sugar
  3. Beat till smooth.
  4. Smear over the cake.
