Creamy, crunchy & absolutely loaded with flavour!

Ingredients – Cauliflower & Chickpea Topping
  • ½ Cauliflower Head
  • 1 can Chickpeas
  • Drizzle Olive Oil
  • 2 tsp. Onion Powder
  • 2 tsp. Cumin Powder
  • 2 tsp. Paprika
  • Pince of Salt & Black Pepper
Ingredients – Tabbouleh Salad
  • 1 bunch Frilly Parsley
  • ¼ Red Onion (finely diced)
  • 2 Tomato’s (finely diced)
  • ½ Cucumber (finely diced)
  • 1 Lemon (juiced)
  • Pinch of Salt
  • 1 tblsp. Olive Oil
Ingredients – Serving
  • 1 cup Coriander Hummus (Recipe from Bringing it Home – page 42)
  • 1 cup Raita (Recipe from Bringing it Home – page 102)
  • Handful Sesame Seeds
  • Handful Pomegranate Rubies
Method
  1. Pre-heat the oven to 200°C.
  2. Mix all the cauliflower & chickpea ingredients together. Toss well & bake for 15 minutes.
  3. Combine the salad ingredients together.
  4. Layer the ingredients in this order: Coriander Hummus, Raita, Cauliflower Mix, Tabbouleh Salad & Chickpea Topping.
  5. Sprinkle over the pomegranate rubies & sesame seeds.
