Home » Coconut Tea Loaf
Buttery, golden loaf mixed with tropical notes of coconut.
Ingredients: Cake
- 4 Eggs (separated)
- Pinch of Salt
- 1 cup Sugar
- 150g Butter (Soft)
- ½ cup Milk
- 1 ½ cups Flour
- 1 tblsp. Baking Powder
- 1 cup Desiccated Coconut
Ingredients: Syrup
- 1 cup Water
- 1 cup Sugar
- 2 tblsp. Lemon Juice
- 1 Cinnamon Stick
Ingredients: Glaze
- 1 cup Icing Sugar
- ¼ cup Water
Ingredients: Decor
- Candied Coconut Slices
Method:
- Pre-heat the oven to 180˚.
- Mix the glaze ingredients together & set aside.
- Mix the syrup ingredients together in a pot & cook till sugar has dissolved, then set aside to cool.
- Beat the egg whites with salt till soft peaks.
- Beat the egg yolks, sugar & butter till creamy.
- Add the milk & mix till well incorporated.
- Add the flour & baking powder into the egg mix & fold in
- Stir in the desiccated coconut.
- Now fold in the whipped egg whites.
- Pour into greased baking pan & bake for 30-40 minutes.
- After baking, pour over the syrup & allow to cool for a few minutes.
- Decorate with glaze & candied coconut slices.
