Chilli Chocolate Chefs

Coconut Tea Loaf

Home » Coconut Tea Loaf

Buttery, golden loaf mixed with tropical notes of coconut.

 

Ingredients: Cake
  • 4 Eggs (separated)
  • Pinch of Salt
  • 1 cup Sugar
  • 150g Butter (Soft)
  • ½ cup Milk
  • 1 ½ cups Flour
  • 1 tblsp. Baking Powder
  • 1 cup Desiccated Coconut
Ingredients: Syrup
  • 1 cup Water
  • 1 cup Sugar
  • 2 tblsp. Lemon Juice
  • 1 Cinnamon Stick
Ingredients: Glaze
  • 1 cup Icing Sugar
  • ¼ cup Water
Ingredients: Decor
  • Candied Coconut Slices
Method: 
  1. Pre-heat the oven to 180˚.
  2. Mix the glaze ingredients together & set aside.
  3. Mix the syrup ingredients together in a pot & cook till sugar has dissolved, then set aside to cool.
  4. Beat the egg whites with salt till soft peaks.
  5. Beat the egg yolks, sugar & butter till creamy.
  6. Add the milk & mix till well incorporated.
  7. ⁠⁠Add the flour & baking powder into the egg mix & fold in
  8. Stir in the desiccated coconut.
  9. Now fold in the whipped egg whites.
  10. Pour into greased baking pan & bake for 30-40 minutes.
  11. After baking, pour over the syrup & allow to cool for a few minutes.
  12. Decorate with glaze & candied coconut slices.
