Passion Fruit Slice

Refreshingly sweet, cool & creamy layers of passion fruit bliss.

Passion Fruit Coulis Ingredients
  • 1 cup Passion Fruit Pulp
  • ½ cup Sugar
  • ¼ cup Water
  • 2 tblsp. Lemon Juice
Filling Ingredients
  • 500g Cream Cheese
  • 250g Mascarpone
  • 1 can Sweetened Condensed Milk
  • ¼ cup Lemon Juice (freshly squeezed)
  • 200g Tennis Biscuits
Method
  1. Simmer the passionfruit pulp, sugar, water & lemon juice in a small saucepan for approximately 10 minutes until reduced & syrupy.
  2. Remove from the heat & allow to cool.
  3. Whip together the cream cheese, mascarpone, condensed milk & freshly squeezed lemon juice.
  4. Stir in half of the passion fruit coulis.
  5. Line 2 x loaf pans with two layers of plastic wrap.
  6. Add a few spoonful’s of cream mixture & swirl in two spoonful’s of passion fruit coulis.
  7. Add a layer of tennis biscuitsz, then repeat until you’ve used all the cream & coulis.
  8. Finish with a layer of tennis biscuits.
  9. Add a layer of plastic wrap to the top (fold in the overhanging plastic).
  10. Refrigerate overnight & serve when required.
