Passion Fruit Coulis Ingredients
- 1 cup Passion Fruit Pulp
- ½ cup Sugar
- ¼ cup Water
- 2 tblsp. Lemon Juice
Filling Ingredients
- 500g Cream Cheese
- 250g Mascarpone
- 1 can Sweetened Condensed Milk
- ¼ cup Lemon Juice (freshly squeezed)
- 200g Tennis Biscuits
Method
- Simmer the passionfruit pulp, sugar, water & lemon juice in a small saucepan for approximately 10 minutes until reduced & syrupy.
- Remove from the heat & allow to cool.
- Whip together the cream cheese, mascarpone, condensed milk & freshly squeezed lemon juice.
- Stir in half of the passion fruit coulis.
- Line 2 x loaf pans with two layers of plastic wrap.
- Add a few spoonful’s of cream mixture & swirl in two spoonful’s of passion fruit coulis.
- Add a layer of tennis biscuitsz, then repeat until you’ve used all the cream & coulis.
- Finish with a layer of tennis biscuits.
- Add a layer of plastic wrap to the top (fold in the overhanging plastic).
- Refrigerate overnight & serve when required.
