Ingredients – Cauliflower & Chickpea Topping
- ½ Cauliflower Head
- 1 can Chickpeas
- Drizzle Olive Oil
- 2 tsp. Onion Powder
- 2 tsp. Cumin Powder
- 2 tsp. Paprika
- Pince of Salt & Black Pepper
Ingredients – Tabbouleh Salad
- 1 bunch Frilly Parsley
- ¼ Red Onion (finely diced)
- 2 Tomato’s (finely diced)
- ½ Cucumber (finely diced)
- 1 Lemon (juiced)
- Pinch of Salt
- 1 tblsp. Olive Oil
Ingredients – Serving
- 1 cup Coriander Hummus (Recipe from Bringing it Home – page 42)
- 1 cup Raita (Recipe from Bringing it Home – page 102)
- Handful Sesame Seeds
- Handful Pomegranate Rubies
Method
- Pre-heat the oven to 200°C.
- Mix all the cauliflower & chickpea ingredients together. Toss well & bake for 15 minutes.
- Combine the salad ingredients together.
- Layer the ingredients in this order: Coriander Hummus, Raita, Cauliflower Mix, Tabbouleh Salad & Chickpea Topping.
- Sprinkle over the pomegranate rubies & sesame seeds.
