Comforting tomato richness with a fresh, herby lift.
Ingredients: Creamy Dip
- 500g Cream Cheese
- 2 Chillies (roughly chopped)
- ½ cup Coriander (finely chopped)
- ½ cup Parsley (finely chopped)
- 8 – 10 Basil Leaves
- 3 tsp. Garlic (crushed)
- ¼ cup Spring Onion (finely chopped)
- ¼ tsp. Salt
Ingredients: Tomato Mix
- 2 cups Cherry Tomato’s (halved)
- 10 Garlic Cloves (thinly sliced)
- 1 tblsp. Red Chili Flakes
- ¼ cup Extra Virgin Olive Oil
- ¼ tsp. Salt
- 5 – 6 Fresh Basil Leaves
Method: Creamy Dip
- In a food processor combine the creamy dip ingredients & blend until smooth.
Method: Tomato Mixture
- Heat the olive oil in a pan, on low heat.
- Add the garlic.
- Simmer & add the rest of the ingredients.
- Cook on a low heat for a few minutes (until the tomato’s soften).
- Spread the dip on a large platter & place the tomato mix over.
- Sprinkle with black pepper & serve with crostini’s.
