Comforting tomato richness with a fresh, herby lift.
Ingredients: Dough
- 400g Warm Water
- 1 tsp. Dry Yeast
- 500g Bread Flour (plus extra, if needed, for a soft dough)
- ¼ cup Olive Oil
- ½ tblsp. Kosher Salt
- Fresh Rosemary Sprigs
Ingredients: Toppings
- 1 Cheese (Round)
- ¼ cup Hummus
- ¼ cup Tzatziki
- ½ cup Olives (marinated)
- ¼ cup Garlic Butter
- 6 Cherry Tomato’s
- Honey Drizzle

- ¼ cup Onion Marmalade

Method:
- Preheat the oven to 200°C.
- Grease a 30cm square baking tray with 2 tblsp. olive oil.
- In a mixing bowl, whisk together the warm water & yeast. Set aside for a few minutes until foamy.
- Add the flour, 2 tblsp. olive oil & kosher salt.
Knead on low speed until a soft, smooth dough forms. - Cover & allow the dough to proof for 1 hour, or until doubled in size.
- Turn the dough out onto the greased tray & gently stretch it into the corners (as shown on IG Live).
- Allow the dough to proof again for 20–30 minutes.
- Drizzle over the remaining olive oil & press rosemary sprigs into the dough.
- Press 4 ramekins firmly into the dough to create wells.
- Bake for 15 minutes, until lightly golden.
- Carefully remove the ramekins. Place the cheese in one well, spoon the hummus into
another, add the tzatziki to the next & finish by filling the remaining well with the marinated olives. - Return to the oven for a few minutes, just until warmed through.
- Garnish with fresh figs, cheddar cubes & a final drizzle of olive oil. Serve warm.
