Brownie Ingredients
- 175g Butter
- 275g Castor Sugar
- 50g Brown Sugar
- 200g Dark Chocolate
- 130g Flour
- 3 Eggs
Filling Ingredients
- 2 tblsp. Butter
- 100g Phyllo Pastry (shredded)
- 100g Kataifi Pastry
- 200g Pistachio Paste
Topping Ingredients
- 125g Milk Chocolate (chopped)
- 100g Fresh Cream
- 50g White Chocolate (melted)
Method – Brownies
- Pre-heat the oven to 180˚C.
- Line a 15cm square pan with greaseproof paper.
- Melt the butter, brown sugar & castor sugar on the stove.
- Turn off the heat, add in the dark chocolate & mix till smooth.
- Sift in the flour & mix till smooth.
- Whisk in the eggs.
- Bake for 20 minutes until the top is set.
Method – Filling
- Heat the butter & fry the phyllo & kataifi pastry till golden.
- Allow to cool.
- Mix in the pistachio paste.
- Smear this over the cooled brownie.
Method – Topping
- Heat the fresh cream in the microwave.
- Add in the chopped milk chocolate & mix till smooth.
- Pour this over the phyllo topping.
- Drizzle the white chocolate over.
